Turkey Salad

Roasted Turkey Salad

2 cups chopped turkey
1 stalk celery, finely chopped
1 cup red seedless grapes, halved
1 gala apple, cored and chopped (leave peel on)
1/2 cup coarsely chopped walnuts
1/4 cup unsweetened apple juice
2 heaping Tablespoons mayonnaise (I use Grapeseed Vegenaise)

Make a dressing with apple juice and mayo. Pour over all other ingredients. Serve on toast, a bed of lettuce or just plain. Mmm.

YUM! What a great idea! I think I made a turkey curry last year after T-day! This reminds me of that recipe! I love adding grapes to a salad!

I just found you through Menu Plan Monday on Organizing Junkie, and I'm so glad to have some wheat-free recipes! My mother-in-law does not eat wheat, and it's a challenge for me to come up with things to serve when we have them for dinner. thanks!
